On October 9, 2024, in the vibrant setting of Vertigo Jazz Club & Restaurant, the 5th Gastronomy Industry Meeting in Wrocław took place under the theme “Table of Sustainable Gastronomy Best Practices.” The event provided a unique opportunity to delve into the concept of sustainable development in gastronomy and explore the opportunities offered by the Michelin green star for Polish restaurateurs.
The meeting was hosted by Maciej Dobrzyniecki, President of the Gastronomic Academy in Poland and Vice President of the International Academy of Gastronomy in Paris, who contributed valuable insights and shared his extensive experience regarding trends in sustainable gastronomy. Through discussion panels and workshops, attendees gained insights into changes and initiatives worth implementing to support ecological transformation in restaurants.
The special guest was Jonas Lagerström, renowned chef from Stockholm’s Etoile* restaurant, honored with both the red and green Michelin stars. Lagerström shared his expertise and experience, discussing the challenges and rewards of incorporating sustainable practices into the culinary industry. His presentation was filled with inspiring examples, sparking lively discussions among the restaurateurs present.
The event was supported by the brand Vorwerk, whose presence emphasized the importance of technological support in the development of sustainable gastronomy.
