Marcin Jenczelewski is a chef with over 21 years of experience who today is shaping a new culinary direction for one of Poland’s most iconic restaurants – Piwnica Świdnicka in Wrocław. His cuisine is a dialogue between history and modernity: respect for tradition meets an original perspective, precision, and a deep understanding of contemporary culinary trends.
He gained experience both in Poland and abroad. Throughout his professional journey, he has developed a strong belief that cuisine should be a complete experience – from the quality of ingredients and culinary technique to the emotions guests feel at the table. For Marcin, cooking is a form of storytelling – precise like photography and engaging all the senses.
An important part of his professional development has also been collaborations and guest chef dinners with renowned chefs, including Diogo Rocha (1 Michelin star and 1 Michelin Green Star), Paulo Alves (1 Michelin star), and Henrique Sampario Ferreira (Michelin recommended). These experiences have naturally enriched his style while remaining a background to his own distinct and consistently evolving culinary language.
Marcin’s philosophy is based on seasonality, conscious use of ingredients, and a less-waste approach. Each dish is treated as a thoughtful composition – refined in detail yet free from unnecessary pretension. At Piwnica Świdnicka he works with local products and classic flavors, reinterpreting them in a modern, light and honest way.
His cuisine does not need grand declarations – it speaks for itself through flavor, consistency and authenticity. These qualities make Marcin one of the most interesting voices in contemporary gastronomy in Wrocław today, while under his leadership Piwnica Świdnicka is shaping a new and modern culinary identity.
